There is a photograph in Bibi's portfolio that captures what she does better than any line I could write. Twelve takeaway packs of jollof rice lined up in perfect perspective, each one crowned with the same plantain, the same assorted meat, the same colour of fire-touched grain. This is what catering at scale looks like when someone takes it seriously. Not a luxury one-tray-at-a-time piece. A volume operation that has to deliver to thirty, fifty, two hundred people at once, without any single plate tasting tired. Scroll the rest of her work. Efo riro thick with assorted protein. Peppered meat in dark metal bowls. Stir-fried penne pasta for a corporate lunch. Coconut rice for variety. Hand-boiled eggs and shredded cabbage on a salad bed. Bibi cooks. Lagos eats. That is the whole proposition. She is on the cohort because the office events, the family functions, and the end-of-years that hold this city together need someone who delivers volume without compromise.
